Keto Friendly Pancake Mixes - Which one is best for you?

Disclaimer: This posts contains affiliate links and codes. This means Keto Anywhere receives a commission if you decide to make a purchase using these which comes at no cost to you. Keto Anywhere is indepently owned and the opinions expressed are its own.

This blog post is all about Keto labeled Pancake & Waffle mixes. From ones you can find in stores like Aldi, Trader Joe’s, Walmart and more to ones you can find on Amazon or order directly from the brands.

I’m comparing not just taste but also ingredients, price, texture, ease to prepare, additional ingredients needed. All things that will hopefully make it easier for you to decide which one you want to try.

Keto foods tend to be pricey. I hope I can help you choose which one to ‘invest’ in.

Keto friendly Pancakes or Waffles? Both and either works!

I’ve noticed through these reviews that Mixes are labeled as both Pancake and Waffle mixes, which leaves it up to us to see how we like it best. Since I received a mini waffle maker just in time to start reviewing these mixes I’ve tried most as pancakes and waffles. Either way I’ve been very positively surprised by many of the mixes I’ve come across.

Except for one thing: If you’re a brand making mixes and reading this: Please stop putting cinnamon in your mix. Let us - the consumer decide whether we want to add cinnamon or not. Because I for one, would prefer my pancakes and waffles without it :/

But let’s get on to business!

I’ve reviewed the following:

If I can get my hands on samples I will eventually review these:

  • ANS performance - Pancake mix

  • Diabetic Kitchen - Pancake mix

  • Extra White Gold - Pancake mix

  • Lakanto - Pancake mix

  • Happy Brands - Pancake mix

  • Keto Candy Girl - Pancake mix

  • Keto Queen Kreations - Pancake mix

  • Phoros - Pancake mix

  • So nourished - Pancake mix

Let’s get started comparing Keto Friendly Pancake Mixes!

It's All In The Mixx - Pancake & Waffle Mix

About the company: Sooo…I noticed a few weeks ago that their Social Media presences vanished and am suspecting they might be going out of business. Their mixes are still on Amazon though so I’m keeping the review in for now.

Women-founded business. Meet Hope DeLong and Cathy Jean Norman who “joined forces to bring goodwill and good food to others.” Their goal is “ is to provide products made from the highest quality, all natural ingredients that support health and wholeness to the market, while maintaining traditional baking results.”

“Products are grain free, sugar free and gluten free.” They “do not have soy, gum, or other additives” and stay under 3gr net carbs per serving!

Sweetener used: Erythritol, Stevia Leaf Extract

Cleanliness of ingredients: There’s only one ingredient that stands out: Arrowroot. It might make you pause like it did me. Although this is a root and with it come starch it has a Low glycemic index of 14, which makes it good to go even with clean and strict Keto. More on this in the blog post about ingredients to watch out for - or not.

Serving size: 2 pancakes or 1 waffle (35gr)

Calories per serving: 70

Net Carbs per serving: 3gr net carbs

Carb calculation: 5 (Total Carbs) - 1gr (Fiber) - 1gr (Erythritol) = 3gr net carbs

Serving per bag: 8

My thoughts on serving size: I felt like a serving was very satisfying.

Ingredients that need to be added: Eggs (1-4) , Water or Almond Milk (1/4 to 1 cup), Butter or Coconut Oil (1-4 Tbsp) - Quantity depends on how many servings you’re preparing

Raw dough test: Edible! I don’t expect pancake batter to taste particularly well but this one was ok raw :)

Ease of preparing: Mix the added ingredients. Then mix the mix in. I forgot to mix the added ingredients first and did it all at once which worked out just as well. Let it rest for 2-3 minutes and start cooking. Preparing the mix is very easy and there aren’t many dishes to clean afterwards.

Once you’re ready to cook the pancakes pay attention. Don’t heat your pan /skillet up too much. Keep the dough flat in the pan or it will burn before they’re ready. Once I had that figured out the pancakes turned out great. Didn’t have that challenge with the waffles as the temperature is much more even and comes from both sides.

Cooking time: Quicker for waffles than pancakes as I had to significantly reduce the heat on the pancakes to avoid burning them with made the time to cook longer. Still reasonable though.

Visual appeal: The waffles looked sublime. The pancakes I have to practice a bit more. Not gritty at all though. Nice brown hue.

Pancake smell in the kitchen: Didn’t smell much. A little smell maybe but nothing to make you close your bedroom doors to keep the smell in one place

Further tips: I love that they print on the back how to add ingredients with half or 1/4 of the mix. I made a little more than I needed to keep some as snacks in the fridge.

My texture review: It’s perfect. I’m realizing that I’m more of a waffle person these days as I enjoyed these even more than the pancakes although the pancakes came out nice and fluffy.

My taste review: Very happy with the taste. Not sweet so that you can sweeten it with syrup or whipped cream. No cinnamon. THANK YOU! That way people who like it can add it and people like me - who don’t, don’t have to. There might be a slight saltyness to the taste which I thought worked well with the toppings I chose - Lakanto Maple Syrup and whipped cream with raspberries.

Freeze review: I did not try freezing these. Stay tuned for how the fridge-ones turned out.

Other notes:

  • Grain free

  • Gluten free

  • Biodegradable Packaging!

Overall: I think these are great Pancakes / Waffles. Easy to make using ingredients most Keto-ers have at home at all times. They don’t taste ‘Keto’ so you could easily also serve them at a Brunch with non-Keto friends or family and no one would know. Using a chaffle maker you get lots of mini-waffles out of the mix - I’d say at least7 for half the bag.

Other products available: It’s All In the Mixx also have a Brownie Mix and a Bread Mix.

Where to buy: Online through their website www.itsallinthemixx.com and on Amazon.

Price: $8.99 on their website and $9.99 on Amazon.

Birch Benders - Keto Original and Choc Chip Pancake Mix

About the company: “Co-founders Matt and Lizzi moved to Colorado, got married, and got cooking! They set out to create a company with a goal of combining quality, convenience, and incredible taste, with a diverse portfolio of products that appeal to everyone. Birch Benders has grown from a family-owned company to a delicious food brand across the grocery store. Enjoy Birch Benders’ delicious creations!” source: Birch Benders website

Sweetener used: Erythritol in the Chocolate Chips of the Choc Chip mix

Cleanliness of ingredients: They adjusted the recipe and overall the ingredients should not significanlty increase blood sugar levels

Serving size: 2 pancakes (45gr)

Calories per serving: 160 - 210

Net Carbs per serving: 5-6gr net carbs

Carb calculation: 15 (Total Carbs) - 6gr (Fiber) - 3gr (Erythritol) = 6gr net carbs

Serving per bag: 6

My thoughts on serving size: Kinda high carbs for 2 pancakes in my opinion

Ingredients that need to be added: Water! That’s a big plus with these mixes. you just need water.

Raw dough test: Meh

Ease of preparing: Doesn’t get esier than this. Mix and cook. Caution with heat levels

Cooking time: As quick as non Keto mixes

Visual appeal: Pretty authentic

Pancake smell in the kitchen: Didn’t smell too much.

My texture review: The texture was close to the real deal. They fluffed up and looked like pancakes.

My taste review: They didn’t pass for me and it surprised me. I made 2 pancakes and a waffle and decided to toss the rest without even making it. Yep…both for the original and the chocolate chip. For me they were not edible.

Freeze review: I did not try freezing these given that I didn’t even make more than 2 servings.

Other notes:

  • Gluten free

Overall: This is one of those “trap” Keto products. You see them in all major retailers and assume “hm…if they are everywhere it must be good”. Plus the price isn’t too high and it sounds so easy to make. Which it is but unfortunately “easy to make” is useless if the taste isn’t there.

Other products available: They also have products in a cup that you heat in the microwave

Where to buy: Major retailers and Amazon.

Price: $7.99 on their website and $7.99 on Amazon with Whole Foods Fresh.

HighKey - Pancake Mix - Original

About the company: “Co-founded by former Moon Cheese CEO John Gibb and a private business partner, HighKey initially was going to be a low-carb, protein-rich brand” and pivoted into Keto when the duo brainstormed what food they missed most on this diet. The answer? Chocolate Chip Cookies.

“After nearly a year of testing various formulations, HighKey achieved the flavor and texture it was aiming for by using almond flour, natural sweeteners, coconut oil and butter among other ingredients to create Chocolate Chip Mini Cookies”. (source: bakingbusiness.com) From there they tested the cookies with Keto dieters and finally launched on Amazon and their webpage.

Today HighKey constantly reinvents itself with new products like the latest Biscotti and soft biscuits or Lemon Cake Mix.

Sweetener used: Erythritol, Allulose, Stevia Extract, Monk fruit Extract

Cleanliness of ingredients: Tapioca flour is more on the dirty Keto side. It is listed fairly far down in the ingredient list though which means it is a minor ingredient. For more on Tapioca check the Keto Ingredients List.

Serving size: 3 4-in pancakes - 92g once prepared - about 3.2oz

Calories per serving: 290

Net Carbs per serving: 2gr net carbs

Carb calculation: 13 (Total Carbs) - 7gr (Fiber) - 4gr (Erythritol & Allulose) = 2gr net carbs

Serving per bag: 10

My thoughts on serving size: Spot on. I made double to make pancakes and waffles and shared with the family. Plenty for everyone and yes, it easily makes 3 4-in pancakes.

Ingredients that need to be added: For one serving: Eggs (1), Coconut Oil (2 Tbsp) - I would use butter next time. See below on why. Unsweetened Almond Milk (3 Tbsp), Vanilla Extract (1/4 tsp)

Raw dough test: It tastes coconutty and is edible. I wouldn’t say enjoyable but edible.

Ease of preparing: Super easy. Measure how much mix / servings you want to have. Melt the fat. Mix everything together. Done!

Cooking time: As with other pancake mixes, keep the temperature of your pan low for the pancakes. The waffles actually took longer than most of the other mixes I’ve tried so far.

Visual appeal: Spot on! With the coconut oil the mix is on the lighter side and I can image it being more yellow-ish with butter. The pancakes and waffles come out looking perfect and appetizing.

Pancake smell in the kitchen: The family commented on the smell from the other room. So yes! Spot on here too.

Further tips: I followed the recipe and used coconut oil. You melt it and then mix it in. Unfortunately as I mixed everything the coconut oil hardened and clumped in the mix. I then put the whole bowl with the mix in the microwave for 30 seconds and then the texture was on point. Next time I think I would try butter instead. Also to have less coconut flavor in the pancakes / waffles.

My texture review: Great! The pancakes came out fluffy. The waffles were great too. Not dry at all.

My taste review: I love that there’s no cinnamon in the mix. Unfortunately the coconut - due to the oil as fat - was a bit intense for me. I’m excited to try it again with butter instead. Once I had toppings on though I didn’t notice the coconut anymore. I tried them with ChocZero Caramel Syrup and then also with Whipped Cream and loved it!

Freeze review: I won’t be freezing any this time as I didn’t make enough but I have two in the fridge for the following day and am looking forward to seeing if they are just as tasty then

Other notes:

  • Gluten free

  • Grain free

Overall: Another Highkey baking mix that is easy to prepare and super enjoyable for both Keto and Non-Keto folks. See the separate Muffin comparison for a review of their Chocolate Muffins.

As mentioned above I’m excited to try these again with butter rather than coconut oil. I also love how they provide instructions to make ONE serving rather than the whole bag. I’m the only one eating Keto at home so small portions are great. And if you keep in mind that there are 10 servings in this bag, that means you can male LOTS of breakfasts or snacks with just one bag.

Other products available: HighKey makes ready made Chocolate Chip Cookies, Brownies, Hot Cereal, Cereal, Muffin Mixes, Biscuits. Check out the other Blog posts with comparisons to learn more

Where to buy: Online through their website www.highkey.com or on Amazon. This mix is not available in stores yet as of October 2020.

Price: $9.99 on their website. Enter code KETOANYWHERE to save 15% on that price. $9.98 on Amazon.

Keto and Co - Pancake & Waffle Mix

About the company: “Ted Tieken, the founder of Keto and Co, has been following a ketogenic diet since 2014 to manage chronic pain. (He also lost 35 lbs after going keto.) Ted wants to make sure the ketogenic diet is as easy, low-sacrifice, and delicious as possible.”

All of their products are designed according to four guiding principles: Nutrition, Convenience, Taste, and Affordability.

The team is based outside of Boston, MA.

(abbreviated version from Keto & Co Website)

Sweetener used: Erythritol, Monk Fruit

Cleanliness of ingredients: The only ingredient with a higher glycemic index is baking powder although its quantity might be so little that it would cause a blood sugar spike. To learn more about baking powder as well as soluble corn firm and inulin check out the post on ingredients.

Serving size: 2 pancakes / 17gr dry mix

Calories per serving: 150

Net Carbs per serving: 2gr net carbs

Carb calculation: 9 (Total Carbs) - 5gr (Fiber) - 2gr (Erythritol) = 2gr net carbs

Serving per bag: 15

My thoughts on serving size: On the smaller side. If you follow the instructions you’ll be making 3 servings. I’d say 1.5 is spot on for breakfast. Less is more for a snack midday or so.

Ingredients that need to be added: Eggs (3), Nut Milk e.g. Unsweetened Almond Milk (2 Tbsp), Oil / Butter (1 Tbsp)

Raw dough test: It’s fine. Pancake mix usually isn’t yummy raw so this one fits right in.

Ease of preparing: Very easy. Mix the ingredients as shown above. Add 1/2 cup of the pancake mix or grab a scale and weigh 53gr. Let it sit for a minute. It fluffs up fast. Ready to go in the pan, skillet, waffle iron or chaffle maker.

Cooking time: Quick for both pancakes and waffles. For pancakes keep your pan on a low to medium temperature to make sure they don’t burn.

Visual appeal: Great for both the waffles and pancakes. They look just like non-keto version. You can see how the pancakes rise. Not grittyness that would be noticeable visually.

Pancake smell in the kitchen: Not an intense smell but enough to smell that pancakes and waffles are being made.

Further tips: By following instructions you’ll be using 1/5th of the bag to make 4-6 4in pancakes. I made half pancakes and half chaffles. I ended up with 4 chaffles and 6 little pancakes.

My texture review: Perfect. For both the pancakes and waffles. Fluffy and light for the pancakes. A bit crispy for the waffles.

My taste review: This mix has cinnamon and as someone who does not like cinnamon I’m always a bit weary of this. The end product did not taste like cinnamon though. When I smelled the raw mix after opening the bag I also did not smell cinnamon.

The pancakes / waffle themselves fo not have a strong taste which makes it perfect to eat them with syrup or other toppings. No taste of sweetener. No aftertaste.

Freeze review: I did not try freezing these. Stay tuned for how the fridge-ones turned out.

Other notes:

  • Gluten free

Overall: I’m super happy with this mix. I think once you consider that you can make pancakes and waffles 5 times with this bag the price is not bad. The taste was spot on. I had my family - all non ketoers - taste it too and they loved it.

I ate my pancakes with ChocZero Maple Syrup (check discount here) and my waffle with heavy whipped cream and raspberries.

Other products available: Keto & Co also has a Muffin mix (read more about it in the Muffin comparison) as well as bread pixes, brownie mixes and more.

Where to buy: Online through their website www.ketoand.co and on Amazon.

Price: $9.99 on their website. Enter code KETOANYWHERE for 10% off. More info in the discounts section. $9.99 on Amazon.

Maui Keto Treats - Maui Macadamia Sweet Butter Hot Cakes Keto Baking Mix

Maui Keto Treats Macadmia Hot Cakes Pancakes

About the company: Keto family business, located on the island of Maui in beautiful Hawaii. The founder Cathy has been on Keto since September 2018 and lost over 100lbs. One day her children suggested she should share her mixes with the Keto community and this is how Maui Keto Treats was born. Mixes are made one at a time by hand  for the most freshest and accurate batch.

Sweetener used: Organic Erythritol

Cleanliness of ingredients: Very clean! Almond flour, nuts, organic eryhtritol, cinnamon and baking powder

Serving size: 1 - the bag shows 1g but I’m guessing they mean 1 pancake if you split the mix in 10

Calories per serving: 122

Net Carbs per serving: 0.7gr net carbs

Carb calculation: 1.7gr (Total Carbs) - 1gr (Fiber) = 0.7gr net carbs

Serving per bag: 10

My thoughts on serving size: I wasn’t sure how big to make the pancakes to reach the 10 servings per bag and made some bigger and some smaller pancakes. Overall I must have gotten about 15 which was great.

Ingredients that need to be added: 4 eggs, 4oz of cream cheese, 1 tsp vanilla or other flavor, butter

Macadamia nut ratio: I wouldn’t have minded more but it was also good as is.

Raw dough test: Didn’t expect this to be yummy so I’d say similar to real pancakes the dough is better cooked ;)

Ease of preparing: Mix the wet and add the dry. Let stand for 10 minutes. When you add them to your pan / skillet be careful to manage the heat well or flip them early as they can burn easily. Overall getting the mix ready is very easy and if you stay focused while making them it’s very similar to regular / non-Keto Pancakes

Cooking time: As mentioned above you need to keep an eye on your pancakes and heat of the pan or they may burn

Visual appeal: They look great once finished. Just like real pancakes

Pancake smell in the kitchen: Definitely smells like pancakes and gets all family members hungry!

Further tips: I ate mine with Whipped Cream and Raspberries while the family had them with Maple Syrup. Definitely do the 10min wait to fluff up the mix. If you make smaller pancakes you can easily get more than 10 out of the mix. You could even think about using only half the mix with half the added ingredients to have enough for 2 batches on different days.

My texture review: Texture-wise the Pancakes are the real deal. The Macadamia nuts that are crushed into little pieces add a nice bite.

My taste review: I LOVE Macadamia nuts and was really excited to try these. When I opened the bag I smelled the nuts as well as the cinnamon. I’m not a big fan of cinnamon so this worried me a litte. It ended up not being overpowering. There was no aftertaste or cooling effect with the sweetener. I couldn’t even tell it had any.

Freeze review: I did not try freezing these and did not keep them in the fridge to eat later either as the whole family just dug in lol

Other notes:

  • Gluten free

  • Made on Maui

Overall: Without considering price I would give these 5 stars. They are fantastic Keto friendly pancakes that are easy to make and please everyone - Keto-ers and non-ketoers!

Other products available: Maui Keto Treats also has Pizza dough, Sweet Bread mix, Chocolate or Macadamia Butter Pound Cakes, Custard Pecan or Vanilla Cinnamon Sweet Donut Cake mix, Maui Butter Dinner Rolls Mix, Sandwich Bread Mix and Chocolate Chip Cookie Mix

Where to buy: Online through their website www.mauiketotreats.com

Price: At time of posting $12.99 as there is a $4 off sale. Get an extra 15% off with code KETOANY15. More details here.

The Muscle Donut - Keto Pancake & Waffle Mix

About the company: Founded by Jackie and Bill. Two “donut lovers, fitness enthusiasts and true believers of finding balance on everything” they do and eat. First they worked on a “healthier version of a regular donut” before moving on to other treats including this Keto Pancake & Waffle Mix.

Sweetener used: Monk Fruit, Erythritol

Cleanliness of ingredients: For dirty Keto or Low Carb: You’re good eating these pancakes / waffles as on those diets you try to stay within a certain limit of carbs and aren’t necessarily watching ingredients to avoid starch or sugar.

For strict/clean keto, proceed with caution. The 3rd ingredient listed is Cassava. A root with a medium to high glycemic index. More on this in the blog post about ingredients on Keto.

Serving size: 1/2 cup of mix - dry - for 2 1/4in pancakes

Calories per serving: 160

Net Carbs per serving: 3gr net carbs

Carb calculation: 9gr (Total Carbs) - 4gr (Fiber) - 2gr (Sugar Alcohol) = 3gr net carbs

Serving per bag: 8

My thoughts on serving size: I think it’s accurate and good as a small snack. If you want to make it a meal you might need to double up.

Ingredients that need to be added: Water - that’s it

Raw dough test: Pretty plain, like I’d expect from a pancake mix

Ease of preparing: Doesn’t get much easier than just adding water to a mix. I like that they make it easy to prepare this by how many servings you want rather than having to make the whole bag. As with other pancakes / waffle mixes: Watch the heat for your pancakes. The waffles were easy and perfect.

Cooking time: Very fast but I’d recommend taking it slow with the pancakes to avoid burning them.

Visual appeal: Very close to a regular pancake or waffle!

Pancake smell in the kitchen: A little smell. Nothing overwhelming.

Further tips: n/a

My texture review: Another hit. Great texture for the pancakes and waffle version.

My taste review: As with the other mixes I tried my pancakes and waffles with Lakanto Maple Syrup, Choc Zero Syrups and Whipped Cream and Raspberries as well as plain. I think I liked these plain the most actually lol Very close to regular pancakes. No aftertaste or cooling effect with the sweetener. I wish there wasn’t cinnamon in the mix but as with other mixes was happy that it wasn’t strong.

Freeze review: I made a small portion which did not leave any to freeze.

Other notes:

  • Gluten free

  • Grain free

  • Dairy free

Overall: These make great pancakes and waffles. I think I like it as waffles slightly better. If the ingredients work for you: Go and try it!

Other products available: They also have ready-made Keto cookies and cupcakes

Where to buy: Online through their website www.themuscledonut.com and on Amazon.

Price: $9.99 on their website and $12.99 on Amazon.

Nush Foods - Pancake Mix

Image from Nush Foods

Image from Nush Foods

Image from Nush Foods

Image from Nush Foods

About the company: Certified women-owned business founded by Muffy Mead-Ferro who started Nush after being frustrated by only finding food options in stores that were full of sugar.

She started “experimenting with carb substitutes, looking for ingredients high in nutritional value, not just fillers, and that's when” she “discovered the beauty of flax seeds”. Her first creation combined flaxseed with eggs, coconut oil and natural sweeteners and turned into Nush cakes (separate post to follow soon on cakes). Then cookies and now: a Pancake Mix.

Sweetener used: Erythritol, Monk Fruit Extract

Cleanliness of ingredients: Nush prides itself on clean ingredients which is reflected in the ingredient list. Flaxseed, egg, coconut flour, sweeteners, baking soda and salt.

Serving size: 1 pancake / 14gr / 0.5oz

Calories per serving: 60

Net Carbs per serving: 2gr net carbs

Carb calculation: 5gr (Total Carbs) - 2gr (Fiber) - 1gr (Sugar Alcohol) = 2gr net carbs

Serving per bag: 25

My thoughts on serving size: I’m not sure it’s realistic to eat just one pancake. I know that I would want at least 2 as a serving :)

Ingredients that need to be added: Water, Oil

Raw dough test: This is the first pancake dough I try raw that I really enjoyed raw. I was tempted to lick the bowl

Ease of preparing: Super easy. Add the liquid ingredients to the mix. Stir. Done!

Cooking time: As with other mixes, prep the pancakes on low temperature and they will turn out perfect. The waffles took the usual light on / off time on my mini waffle maker

Visual appeal: I love their color. A nice rich light brown. Very appetizing.

Pancake smell in the kitchen: It wasn’t strong. I actually asked my family if they had noticed the smell and they didn’t feel like it was intense.

Further tips: I love when the companies show how to use the mix to just make 1 pancake or 2 or 4. I made 4 and thanks to the bag having a ziplock I can now store the rest away and make it some other time.

My texture review: Spot. On. Just the right firmness. No grittyness.

My taste review: De-licious. Plain or with my favorite topping of Whipped Cream and Syrup. Not too sweet. Zero sweetener taste. No aftertaste. These are just really nice pancakes / waffles.

Freeze review: As I only made enough for 4 pancakes I didn’t have any to freeze. I did keep 2 mini waffles in the fridge to eat the next day and they were perfect. 15 seconds in the microwave and ready to enjoy.

Other notes:

  • Gluten free

  • Paleo

  • Dairy Free

Overall: I’m a big fan of these. I wasn’t sure what to expect as - so far - Nush hasn’t made baking mixes but they hit it out of the park. Really impressed with this mix - as either pancakes or waffles. I love that it uses ingredients you’ll definitely have on hand and that they didn’t burn as easily as other mixes I’ve tried. The flavor is amazing. The texture a hit. Really well done!

Other products available: Single size ready-to-eat cakes and cookies. To be reviewed in separate posts!

Where to buy: Online through their website www.nushfoods.com, on netrition and on Amazon.

Price: $12.99 on their website and netrition. $20.49 for a 2-pack on Amazon

Scarlet's Bakery - Keto Pancake Mix

About the company: 2021 update: I tried these in Fall 2020 and loved the mission. Unfortunately as I updated this post I realized that they might have discontinued their baking mixes line :/ I’m going to keep it in for now but if they don’t come back, we’ll say bye bye to this mix.

This is one of the most inspiring companies I’ve come across while working on this blog post series. Here’s what they say in their own words:

“After several years of supporting women in some of their darkest times, Scarlet Hope, our non-profit parent organization, decided to take their efforts a step further. The concept of a job training facility was established. Scarlet’s Bakery’s intention as a social enterprise is to provide a tangible “next step” for women aspiring to advance the trajectory of their lives, both at home and in their work.

In 2014, the idea of a bakery was brought to life. Rachelle Starr, the Scarlet Hope’s Founder and Executive Director,” saw it “ as a vehicle to cultivating leadership, customer service, and kitchen skills for women who are active in seeking life change.”

When you buy their Keto Pancake mix ALL the profits go to rescue and employ exploited women. Amazing cause to support and stay Keto or Low Carb at the same time.

Sweetener used: Erythritol

Cleanliness of ingredients: Very clean and a short list too: Blanched almonds, coconut flour, erythritol, baking powder, cinnamon.

Serving size: 1 pancake

Calories per serving: 116

Net Carbs per serving: 4.7gr net carbs

Carb calculation: 6.8gr (Total Carbs) - 2.1gr (Fiber) = 4.7gr net carbs

Serving per bag: 12

My thoughts on serving size: The carb count is on the high side for a Keto dieter. For someone on low carb I think the serving size is great.

Ingredients that need to be added: 6 eggs, 4 Tbsp heavy cream, 1 tsp vanilla extract

Raw dough test: Edible. You can definitely taste the cinnamon.

Ease of preparing: Very easy. I put the dry mix in a bowl. Added all ingredients. Mixed it and ready to cook.

Cooking time: Very fast but I’d recommend taking it slow with the pancakes to avoid burning them. Keep the temperature on a low setting - similar to the other pancake mixes. In the waffle iron you don’t need to be as vigilant.

Visual appeal: Both the pancakes and waffles looked great and very appealing.

Pancake smell in the kitchen: Yes! Smelled very appetizing as I was cooking and still have the smell in the kitchen after :)

Further tips: n/a

My texture review: As mentioned above, don’t overcook the pancakes. They will not only brown but they will also dry out. They fluffed up very nicely and so did the waffles.

My taste review: First, I don’t like cinnamon, so having cinnamon in the mix already wasn’t my favorite. The cinnamon flavor is fairly intense for someone who usually doesn’t eat it. Once I added whipped cream and ChocZero Caramel Syrup they were very yummy though :D I preferred the waffle version over the pancake version. Sweetness level is great. No sweetener taste or aftertaste.

Freeze review: The family dug in so there was none left to freeze. We did keep a few to take on an outing though the next day and these were still yummy.

Other notes: n/a

Overall: I love the story behind the bakery. The pancakes / waffles had a nice texture and for people who like cinnamon a great taste too. My non-Keto family highly approved. I wish these were lower in carbs though. Great for Low Carb but for someone one a Keto diet there are lower carb options out there that taste equally good.

Other products available: As of the time of writing this all their other mixes are non-Keto.

Where to buy: Online through their website www.scarletsbakery.org and on Amazon.

Price: $19 for 2 packs on their website. They have an offer of 15% off too that pops up if you browse a little and free shipping on dry mixes.

Superfat - Pancake and Waffle Mix

About the company: Here’s a bit about their founder, David, who has “always lived an active lifestyle” He’s a “serial entrepreneur, used to compete in Ironman triathlons, marathons, and endurance sports, and still..” making physical activity a centerpiece of his day.

He tried many different ways of eating from Vegan to Keto and never achieved the results he envisions until he realized he needed to up the fat which led to the birth of Superfat.

Sweetener used: Erythritol, Stevia, Monkfruit

Cleanliness of ingredients: Chicory root fiber and Soluble Corn Fiber could cause bloating

Serving size: 2 pancakes

Calories per serving: 120

Net Carbs per serving: 2gr net carbs

Carb calculation: 9gr (Total Carbs) - 4gr (Fiber) - 3gr (Sugar alcohols) = 2gr net carbs

Serving per bag: 15

My thoughts on serving size: 1gr net carb per pancake works for me and the instructions allow to make 4 pancakes at a time which turned into 5 mini waffles for me and was perfect

Ingredients that need to be added: Egg, coconut oil or butter, water or almond milk or cream

Raw dough test: Edible and you get a hint of the cinnamon

Ease of preparing: Very easy as many of the other mixes.

Cooking time: I only tried these in the waffle maker and kept the regular waffle heating cycle and they turned out perfect

Visual appeal: Spot on

Pancake smell in the kitchen: Smelled of waffles / pancakes

Further tips: n/a

My texture review: Spot on - just like the visual appeal. They have the right texture for sure!

My taste review: Not a big fan of cinnamon but it wasn’t dominant in these and easily forgotten once I added creme fraiche and blackberries.

About the company: Founded by Alli & Matt Owen, who share a motivation of being “the healthiest version of” themselves “for each other”. Having a family history of diabetes and cancer diagnoses as well as struggles with hormonal imbalances and weight gain made them health conscious and aware of the benefits a low carb and Keto diet can bring.

Sweet Logic was born when seeking “healthy treat options” for people “following the ketogenic lifestyle”. As with many other Keto brands, the best way to ensure you have the treats you seek is to make them yourself!

The Mix above was discontinued as I was working on my review. Stay tuned for an update when I get to sample their new recipe!

Keto Anywhere’s thoughts on Pancake & Waffle Mixes in general

I have to admit that prior to this blog post series I did NOT have Keto friendly Pancake or Waffle Mixes on my radar.

I had come up with my own waffle recipe that I was fairly happy with - taste-wise not texture-wise and had accepted that on Keto or Low Carb pancakes or waffles that are smooth just weren’t a reality.

Boy was I wrong. For the past weeks, every weekend I tried a different mix and with this a whole new world opened up for me. We CAN have pancakes and waffles on Keto that are just as good if not better than non-Keto ones!

A few mixes in I also realized how one bag would last me for 4 or 5 brunches which puts the price in perspective! It’s not $10-15 for ONE breakfast or brunch. It’s more like $2-3 which isn’t as bad!

Quick recap of the mixes tested:

Best Keto friendly Pancake or Waffle toppings

I think this might warrant a blog post comparison of its own but in the meantime, my favorites:

  • Whipped heavy cream from Land O Lakes - I buy mine at Costco

  • Home-made whipped heavy cream

  • Fresh Strawberries, Raspberries, Blackberries or Blueberries

  • If out of season for fresh: Cook up some frozen berries with a bit of sweetener!

  • ChocZero syrups and spreads: My favorite is the caramel syrup and the hazelnut spread! Save 10% with code KETOANYWHERE if you shop on the ChocZero site!

  • Melted Lily’s Milk Chocolate Hazelnut - it’s like Keto friendly Nutella!

What toppings do you like? And which mix is your favorite? I hope to try some more soon and will update the post as I do!
